Naan Bread Pizzas, Spinach Salads, Carrots

Preheat oven to 350 degrees. Place naan breads on a cookie sheet and top with your favorite toppings. To keep it cheap and simple we are using pepperoni and cheese.  Use this recipe for an easy Pizza Sauce. Bake the pizza until crispy and cheese is melted approx. 8 mins.

Use the bag of spinach to make salads and serve the baby carrots as your other side.


Chili Cheese Crescent hot dogs, Cheese Puffs or Pretzels, Carrots

Use this recipe for crescent dogs.  Serve with cheese puffs and carrots.  Makes an easy meal!


Tacos, Refried Beans, Sliced Peaches

Follow the package directions. Use 1lb of turkey burger to make the tacos.  Shred part of the head of lettuce to top your tacos and dice the tomato.


Zuchinni Boats and Garlic Bread

Use this recipe to make the zuchinni boats:  Follow the package directions to make the garlic bread.


One Pot Jambalaya Pasta and Salads

Use this recipe for the pasta. To help keep it lower cost use the 2 packages of smoked sausage. If you have the other meats on hand you can add them if you want. Make salad using a mix of any spinach you have left and the remaining iceberg lettuce.   If you have leftover carrots, onions and cheese you can add those too!

Crispy Roasted Garlic Chicken, Green Beans, Roasted Potatoes

Use this recipe for your roasted chicken.  Take your leftover chicken and dice it for the chicken Alfredo another night.  If you still have leftover chicken you can shred or dice and freeze it.    This recipe for roasted potatoes is super simple- and cooks at the same temp as the chicken!  Boil the green beans in a pan until tender and top with butter.


Smoked Sausage, Grilled Zucchini, and Rice

Butterfly the smoked sausage and grill until hot.  While the sausage is cooking, grill the balsamic zucchini using this recipe.  You can cook the Rice A Roni while you are grilling (just keep an eye on it!)


Pan-Seared Pork Chops, Baked Potatoes, and Tomato Cucumber Salad

Pork needs to marinate! Use this recipe for the pork chops, but instead of one giant tenderloin, use the four pork chops in the package instead.  You may have to reduce your cooking time!  While prepping the pork, go ahead and bake the potatoes in the oven.  Slice up the tomatoes and cucumbers and drizzle Italian dressing over them.


Chicken Alfredo, Broccoli, and Bread

Take your leftover chicken and add it to Alfredo sauce and heat thru.  Serve over top noodles.  You can add the broccoli into the Alfredo or serve on the side.  Slice baguette and top with butter.


Pizza and Grapes

Easy night!  Save this meal for when your kids have sports, or you have a late day at work.  Balance out the pizza with grapes and any leftover cucumber salad.

Garlic Chicken Stir Fry and Hibachi Soup (Japanese Steakhouse-style)

Use this recipe for the garlic chicken stir fry.  Use half of the chicken, all of the broccoli, one green pepper instead of yellow, half of the Vidalia onion, and whatever mushrooms are left after you use one cup for the soup.  To make the white rice use one cup rice and two cups water.  Bring to boil, cover, and simmer on low for 25 min.  Serve stir fry on top. Use this recipe for the soup- it’s SO good!


Spaghetti, Salad, and Naan Bread

Easy night!  Use the noodles and pasta sauce for spaghetti.  For the salad, use slightly less than half of the lettuce, half of the cucumber, half of the green onions, and some of the celery and carrots.  Heat the naan bread while the spaghetti is cooking.


Slow Cooker Chicken Tacos, Refried Beans, and Blueberries

Use the other half of the chicken to make this recipe.  Use the carton of chicken broth for this recipe.  Save most of the lettuce for salad for another night, and use a little bit shredded up for the tacos.  Use a bit of the Vidalia onion and both Roma tomatoes. Heat up the beans in the microwave or on the stove top.  Serve with blueberries!!


Jack’s Pizza, Salad, and Apricots

Easy night!  While the pizzas are baking, prep your salads.  Use the rest of the lettuce, half of the cucumber, half of the green onions, and some of the celery and carrots.  Serve apricots whole or slice them.


Smoked Sausage and Peppers, Herbed Rice, and Strawberries

Use this recipe to make the smoked sausage and peppers.  Use the rest of the Vidalia onion and one green pepper.  While the sausage is heating up, go ahead and make the herbed rice, using the can of chicken broth.  Serve with sliced strawberries.

Grilled Herb Chicken Legs, Corn, and Avocado Tomato Salad

Use approximately half of the chicken legs in your package (7) for this meal and save the rest for another meal.  Use the recipe found here to make your herb chicken.  Feel free to bake the chicken, but I would grill it so you can grill your corn also.  Dice your avocado, two tomatoes, and 1/3 of your onion. Sprinkle with parsley, oregano, and garlic or garlic powder. Drizzle a little olive oil, red wine vinegar, and salt and pepper on top.


Louisiana Dirty Rice With Smoked Sausage and Strawberries

Follow the recipe on the Louisiana Dirty Rice Package.  While the rice is simmering cook your sausage.  You can grill it or butterfly/slice it and cook in a skillet until crisped up a little.  Serve with diced strawberries


Easy Beef Goulash, Crisp Marinated Cucumbers, and Garlic Bread

Follow the recipe here for the goulash.  Use ground turkey instead of ground beef. Save a teeny bit of onion for the hash browns in the breakfast dinner.  If you forget to make the cucumbers a day ahead, you can always just slice them and drizzle with Italian dressing.  Use this recipe to prep your cucumbers the night before.  Take the Meijer Italian bread and slice in half long ways.  Spread with butter, basil, oregano, and garlic powder.  Bake in a 375 degree oven until done.  If you have cheese lying around you can add that to your garlic bread.


Fried Chicken, Mashed Potatoes, and Green Beans

Use the recipe here for the fried chicken.  While you are getting the fried chicken prepped go ahead and boil some of your potatoes for the mashed potatoes.  Drain potatoes when soft, mash, and add milk and butter.  You can cook the green beans in some water in a sauce pan until tender.  Top green beans with butter, salt, and pepper.


Eggs, Hashbrowns, and Sausage

Easy night!  Cook the eggs however you like best.  Dice up a few potatoes and cook in a little oil in a skillet.  If you have some green pepper leftover add that along with the onion to the hash browns.  Cook the sausage in another pan while the hash browns are cooking.

Hamburgers, Baked Beans, and Watermelon

Use this recipe to make the hamburgers.  Instead of dried onion, I dice a bit of onion and sprinkle on the bottom of the pan.  The recipe says these are copy cat White Castle burgers.  And while I don’t think they’re exactly like White Castle, they are super tasty nonetheless.  While the burgers are baking, heat up the beans in a pot or microwave.  Cut up the watermelon and serve half with this meal.


Bacon Grilled Cheese, Pretzel Crisps, and Watermelon

Prepare all of the bacon, except for SIX PIECES.  I like to bake my bacon, but skillet is ok too!  Use the Italian bread (sliced) for your grilled cheese. When you are making your grilled cheese, throw a slice of bacon (cut in half) in the middle of your sandwich.  Serve with pretzels and the second half of the watermelon.  This is a great meal if you have a busy night!


Chicken Legs, Bacon Green Bean Bundles, and Grilled Corn

Sprinkle the McCormick seasoning on your chicken and grill or bake in oven.  Use this recipe to make the bacon green bean bundles.  Grill your corn the way you usually do (or boil it).


Hot Dogs, Steak Fries, and Grapes

Grill or skillet cook your hot dogs.  While they are cooking you can bake your French fries.  Serve with grapes as a healthy side.


Grilled Chicken Salad, Peaches, and Garlic Bread

For the salad use the lettuce, green pepper, tomato, cucumber, and some onion.  Grill your chicken with salt and pepper, or even the McCormick seasoning again if you’d like.  Slice the chicken and serve on top of your salad.  For the garlic bread you can use leftover hamburger buns, hot dog buns, or Italian bread.  Spread the bread with butter, garlic powder, Italian seasoning, and if you have some on hand, shredded cheese or parmesan cheese.  Bake in the oven at 375 until it is toasty warm!

Brats, Baked Beans, Tomato Slices

Grill the brats and serve on the hot dog buns.  If you have leftover onion top your brats with it.  Heat up the baked beans while the brats are grilling.  Slice up half of the tomatoes and sprinkle with salt and pepper, and a little Italian dressing, if desired.


Manhattan Hot Shot Sandwiches, Mashed Potatoes, and Cucumber Slices

Use this recipe to make the roast beef sandwiches.  Use about 1/3 of the loaf of bread and save the other half for French toast. Go ahead and prepare the potatoes and turn into mashed potatoes the way you normally make them (boil, drain, mash, add milk and butter).  Slice up a cucumber, and top with lemon juice, salt, and pepper.


Banana French Toast, Eggs, and Hash browns

Mix 2 eggs with 1/2 cup milk and some cinnamon for your French toast batter.  Dip your bread in and cook on both sides in a skillet until done.  Top with sliced bananas.  Make some eggs however you like them (scrambled, fried, over medium, etc).  If you don’t need them all, save them for another week or hard boil some for a quick breakfast.  Diced up a few potatoes and fry in a skillet until crispy.  If you have leftover onion or cheese, top your hash browns with them!


Turkey Tacos, Refried Beans, and Grapes

Use the ground turkey to make tacos.  Use lettuce, the rest of the tomatoes, onion, and the cheese.  Heat up beans in a skillet while taco meat is browning.  Serve with grapes as a healthy side dish.

Grilled BBQ Chicken Legs, Grilled Corn, Marinated Tomato Salad

Use one of the bottles of BBQ sauce on your chicken legs.  Grill your corn as you usually do.  For the salad, dice up 2 Roma tomatoes, a whole cucumber, and part of the onion.  You will need onion for every meal, so I would suggest dicing it up and dividing by 5.   Top the tomatoes/cucumber/onion with Italian dressing and let marinate while you grill.


Tacos, Refried Beans, Peaches

We do have tacos a lot, but if the items are on sale, you might as well take advantage.  Plus, depending what else is on sale, you can add variety.  This week we are buying cilantro for another meal, so we will add them to our tacos!  Use the ground beef for the tacos, and prepare as you normally do.  Use 1/5 of the onion, one Roma tomato, and a bit of the lettuce, diced small.  Heat your beans in the microwave or in a skillet.  Serve the peaches whole or slice them as a healthy side.


Pasta, Salad, and Buttermilk Biscuits

Prepare your Jiffy Biscuits and throw them in the oven while you prepare the rest of your meal.  Pretty simple, noodles (Creamette), pasta sauce, and a side salad.  Use one tomato, diced carrots, 1/2 of a cucumber, half of a green pepper, and some of the onion.


Chicken Kebobs, Mac N Cheese, Strawberries

Dice your chicken into kebob-size pieces.  Marinate for a few hours (or overnight) in the Italian dressing.  Thread onto skewers with a whole green pepper and some of the onion.  Grill while your Mac n cheese is cooking. Serve with Mac n cheese and sliced strawberries.


Black Bean Soup, Salad

Black bean soup is very inexpensive to make, and also super tasty.  We will round it out with a huge leafy salad!!  Use this recipe here.  Just use 2 cans of beans, and two cans of salsa should be good.  For the salad, use the rest of the lettuce, one tomato, part of the onion, half of a green pepper, half a cucumber, and some diced carrots.  Enjoy!


After these meals you should have one BBQ sauce left over.  If you have leftover cilantro, use it for a meal the next week!  You will probably have some extra baby carrots to snack on!

Smoked sausage, potatoes, asparagus, and carrots (one pan dish)

I’ve found that you can use about half the called for olive oil and it still turns out great. To save money we are using regular carrots instead of the baby carrots. Just peel and chop the carrots to about the approximate size of baby carrots.  You can find this amazing recipe by clicking here.


Tuna noodle casserole, carrot sticks, parmesan garlic roasted broccoli

Boil egg noodles and peas until noodles are desired doneness. Drain and then stir in 2 cans of tuna (drained), 2 cans of cream of mushroom soup, salt, pepper, and a can worth of milk. Stir and serve.  You can vary the amount of soup if you’d like the casserole less creamy.

Peel and slice carrots into sticks. Roast the broccoli using this recipe.


Turkey burgers, potato salad, green beans

Follow the directions on the box to cook the burgers and serve as you typically would burgers.  Cook green beans as you normally would. I like to put a beef bouillon cube, black pepper, and onion in mine.

White bean and asparagus pasta, garlic bread, salads

Omit the spinach from the recipe. Use one roma and the other half of the asparagus. Cut the asparagus in about 2” sections. Sautee the asparagus in the same step with the tomatoes.  If desired you can also add chicken to the dish

Use the leftover hamburger buns to make garlic bread. Spread butter on them and sprinkle with garlic powder. Bake at 400 degrees for about 10 mins or until desired doneness.

Chop iceburg lettuce and dice tomatoes for salads. Reserve some of each for tacos.


Tacos, black beans, Mexican rice

Use Ground turkey to make the tacos and follow the package directions for the rice. Use lettuce and tomatoes leftover from salads. Cook the black beans as you normally would. Sometimes we like to add a little diced onion to our beans as they cook.

Grilled Chicken Thighs, Grilled Corn, and Homemade Coleslaw

To make the coleslaw, use the recipe found here, by GarlicQueen.  If you have celery seed on hand add that to the dressing as well.  Make the cole slaw earlier in the day if you can, so the flavors can combine.  Use your favorite chicken seasoning on the chicken.  Grill all 5 ears of corn, but remove the corn off one of the cobs after cooking.  Save this corn for the Wildfire Chicken Salad.


Black Bean Spinach Quesadillas and Strawberries

Follow the directions found here for the black bean spinach quesadillas.  If you have a little bit of black beans leftover, you can add them to the Wildfire Chicken Salad.  Slice the strawberries for a healthy side dish.


Wildfire Chicken Salad and Corn Bread

Make the Jiffy corn bread according to package, either as muffins or in a square pan.  For the salad, grill the chicken breast with a little bit of chili powder and/or cumin.  Let cool and slice into thin strips.  Prepare salad by combining Dole salad and leftover spinach.  Top with the last 1/2 of the pepper, a few of the tomatoes, diced green onion, and leftover Mexican cheese.  Top salad with chicken strips.  Mix together some BBQ sauce and ranch dressing and drizzle on your salad.


Smoked Sausage, Rice, and Mango

Butterfly your smoked sausage (slice almost in half) and either grill, pan cook or use a George Forman-type machine.  Prepare yellow rice according to package directions.  Slice sausage and either serve on top of rice or on the side.  Serve with diced mango.

Shred half the head of cabbage and follow this recipe for the dressing

Bake the potatoes how you normally would and top with butter/sour cream.  I like to microwave mine and this recipe is super simple:


BBQ pizza, homemade chips and ranch pasta salad

Follow the directions on the box to prepare the pizza dough. Spread about 2 tbsp of bbq sauce on the pizza, then put leftover carnitas, and cheddar cheese. If desired you could also put red onion, tomatoes, and bacon on the pizza. Bake as directed on the box.

Cut this recipe in half for the pasta salad (saving half the box of pasta for the lasagna casserole)

Use this recipe to make homemade chips

If you have leftover cole slaw you can finish it with this meal.


Crock pot ranch pork chops, mashed potatoes, green beans

Follow this recipe to make the pork chops:

Prepare mashed potatoes and green beans as you normally would.


Creamy salsa chicken, rice, Mexican roasted zucchini (Cinco de mayo is Friday )

Follow this recipe for the creamy salsa chicken and serve over rice. Top with sour cream if desired.

Prepare rice according to package directions.

Chunk zucchini and in a medium bowl mix zuchinni, 2 Tbsp olive oil, and sprinkle with taco seasoning.  Spread on a baking sheet. Bake in 425 degree oven for 25mins.

Follow this recipe to make the lasagna casserole. To make it easier just use a can of hunt spaghetti sauce.

El Monterey Burritos, Spanish Rice, and Sliced Apples

Prepare burritos according to package.  Divide 1/3 of the shredded cheese over the burritos.  Top with shredded lettuce, tomatoes, white onion, and sour cream.   Save a bit of sour cream for the potato soup. Make Knorr rice according to package directions.  Slice up apples thinly and serve on the side.


Ranch Chicken Strips, Green Beans, and Salad

Slice 1 lb of chicken into thin strips.  Follow this recipe to make the ranch chicken strips.  Heat up the green beans while the chicken is baking/frying. For the salad use lettuce, tomatoes, white onion, 1/2 of the cucumber, and 1/2 of the green pepper.


Brats, Grilled Corn, and Pears

Once your grill is hot heat the brats and grilled corn until done. If you don’t have a favorite corn recipe, try this simple one out!  If you have leftover white onion, you can top your brats and bun with some.  Slice 1 lb of pears and serve on the side.


Omelettes, Hash Browns, Bacon, and Parfaits

Use however many eggs you want for your omelette.  Save at least 2 for the chicken tenders above.  In your omelette you can use 1/3 of the cheese, 1/2 a green pepper, tomatoes, and onion if you’d like.  For the hash browns, slice a few potatoes thinly and fry in oil until crispy.  Need a recipe for the hash browns? Try this one!  Cook up ALL of the turkey bacon.  Cook 2 pieces until super crispy.  Crumble these two pieces and save until you make the potato soup.  Dice up both bananas and serve on top of the yogurt to make a parfait.


Baked Potato Soup and Salad

This is my favorite potato soup recipe.  Plan ahead!!  The potatoes do have to bake for an hour.  When you serve your potato soup, top with 1/3 of the cheese, green onions, diced, and the crumbled turkey bacon.  For the salad, use lettuce, 1/2 of the cucumber, 1/2 of the green pepper, onion, and tomato.  Enjoy!

**I use black pepper and omit white pepper for the potato soup.  I also add a tbsp of chicken bouillon when I’m making the roux for more flavor.

Tacos, Refried Beans, and Cantaloupe

For the tacos you will be making your own taco seasoning!  Use the recipe found here (red pepper flakes optional).  Use the ground turkey for your tacos Use one of the bags of shredded cheese (save the other).  Use 1/4 of the onion, one bag of lettuce, and 2 of the tomatoes for the tacos (diced small).  Serve with half of the cantaloupe (save the other half for another meal).


Chicken Tenders, Rice A Roni, and Fire and Ice Tomatoes

IF YOU CAN, make the Fire and Ice tomatoes earlier in the day or the evening before.  Use the rest of the tomatoes after you save two for the tacos (above).  Cut the recipe in half as it calls for 5 regular size tomatoes and Campari are small.  Use 2/3 of the cucumber and part of the onion. Omit the cayenne if you don’t like spicy food (I leave it out).  For the chicken tenders, slice your chicken breasts into thin strips.  Use the recipe found here.  Save 1/4 cup of the bread crumbs for the Beef N Cheese Pie.  While the tenders are baking, make your Rice A Roni according to package directions.


Spaghetti, Salad, and Garlic Bread

Use one pound of the ground beef for the spaghetti.  Brown and drain ground beef and add to sauce on the stove.  Cook pasta according to directions.  Bake garlic bread in oven according to directions.  While bread is baking, make salad. Use one bag of Dole salad mix, 1/3 of the pepper, 1/3 of the cucumber, and some of the onion.  If you have a few tomatoes left you can use them here.  Enjoy!


Smoked Sausage, Green Beans, and Strawberries

Grill smoked sausage until it’s done.  If you’d like grill 2/3 of the pepper and what’s left of the onion on some foil or in a vegetable basket.  While grilling, heat the green beans on the stove, and slice the strawberries.  Serve sausage on buns with peppers and onions.


Beef N Cheese Pie, Cantaloupe, and Corn Bread.

Here is the recipe for Beef N Cheese Pie (my childhood favorite): Mix 1 lb meat, 1 can evaporated milk, 1/4 c. bread crumbs and garlic salt in an 8″ pie pan.  Top with 1/3 c. ketchup, oregano, and shredded cheddar cheese.  Bake at 350 for 30 minutes.    Bake cornbread (recipe on box) the night before or earlier since it’s at a different temperature.  Serve with the last half of the cantaloupe.

Spaghetti Pie, garlic bread, and garlic green beans 

If you want you can brown half a pound of the ground turkey and add it to the sauce.  Use this recipe for the spaghetti pie. Prepare the green beans while the spaghetti pie is baking.  Use this recipe for the green beans.   Prepare garlic bread according to package.


One Pan Sausage with sweet potato and asparagus

Follow this recipe for the one pan sausage with sweet potato and asparagus.


Smoked Sausage Kabobs and chips 

  • 1 package smoked cooked sausage/kielbasa (about 14 oz), sliced (I used turkey kielbasa)
  • 1/2 fresh pineapple cut into chunks
  • 1 large zucchini sliced
  • 1 bell pepper cut into chunks
  • 1/2 sweet onion cut into chunks
  • BBQ sauce
  • Preheat grill, then reduce heat to medium.
  • Place vegetables and sausage on skewers (I used four 12-inch metal skewers). Lightly sprinkle with salt and pepper.
  • Place the sausage and veggies on the hot grill and cook, rotating occasionally, until the vegetables have softened, the sausage is heated through, and there are slight grill marks. Brush generously with BBQ sauce and cook for a couple more minutes, rotating them once or twice. Watch them closely so that the BBQ sauce doesn’t burn.
  • Remove from the grill, brush with more BBQ sauce, and serve immediately.

Korean Lettuce Wraps, pineapple, white rice

Use this recipe for the lettuce wraps and use the ground turkey instead of beef.  Cube half the fresh pineapple for one of your sides.  Boil 4 cups water, add 2 cups long grain rice.  Cover and simmer 25 minutes.  Save 1 cup of the cooked rice for the burrtios.


Baked Burritos, salads, roasted Mexican zucchini

To make the burrito use the ground turkey instead of ground beef and follow this recipe.  (use 1 cup of leftover rice from lettuce wraps)

To make the roasted zucchini: Cube 3 zucchini and spread on a baking dish. Drizzle with olive oil and sprinkle the taco seasoning to taste. Back 425F for 25 mins or until browned.

Black Bean Soup Over Cilantro-Lime Rice, and Salad

Use the recipe here for the black bean soup.  Use two of the cans of black beans. This recipe calls for seasoned black beans, which we don’t have.  I usually drain the beans and add in extra chili powder, cumin, and garlic powder.  Omit avocado.  Serve over cilantro-lime rice.  For the salad, use about 1/4 of the lettuce chopped small, 1 tomato, some of the celery stalks, 1/8 of the large onion, and half of a green pepper.  Save the other 1/2 of your lime for the burrito bowls (put in Tupperware).


Chicken Burrito Bowls, Tortillas, and Pears

Instead of spending more money on marinade ingredients, just sprinkle your chicken with chili powder, cumin, and garlic powder before grilling.  Slice thin and serve with your burrito bowls.  Base your salad on this recipe.  Follow the recipe on the rice.  For the salad part, swap onion for green onions, and use the canned corn and black beans here.  Use one whole green pepper for the salads.  Save a four pieces of lettuce for the egg salad wraps.  The rest can be used for the burrito bowls.  Serve with tortillas.  Slice two pears thinly and serve as a fresh side.


Egg Salad Wraps, Kettle Chips, and Orange Wedges.

Boil about 8 of your eggs.  Chop and add mayo, diced celery, diced onion, and salt and pepper.  Wrap in tortillas with lettuce and one of your tomatoes.  Serve with chips and half of the oranges, cut into wedges.


BBQ Chicken Legs, Grilled Corn, and Pears

We are going to save money on bottled BBQ sauce and make our own with pantry ingredients!!  Use the recipe here to make your BBQ sauce.  Grill chicken legs, brushing sauce on as you go.  Grill the corn next to the chicken as you normally would.  Slice the last two pears and enjoy a fresh, healthy dinner!


Cheese Quesadillas, Tomato Bisque, and Oranges

Make cheese quesadillas by sprinkling shredded cheese over one of the tortillas.  This is a great meal to use up leftovers.  Have leftover chicken from the bowls?  Toss some on. Have leftover onion and green pepper?  Chop those up and add as well.  Top with a second tortilla and heat in a skillet until brown and crispy.  Flip and cook another minute or until crispy.  Serve with the Campbells Tomato Bisque and the last half of the oranges.

Tilapia, Green Beans, Macaroni Salad

For the Tilapia, use ONE of the Louisiana Fish Fry packets and follow the directions on the box.  The green beans you can saute in a little water in a skillet.  Top with butter, salt and pepper.  Boil the entire box of macaroni.  Chop up at least 1/3 of the celery and part of the onion.  Mix in a squirt of yellow mustard and a bit of mayonnaise.  Sprinkle with salt and pepper.  Use half of the macaroni salad tonight and save the other half for another meal.


Chicken Legs, Macaroni Salad, and Cantaloupe

Sprinkle the chicken legs with garlic powder, onion powder, and oregano and grill until done.  If you have BBQ sauce on hand and want to use that up, feel free.  Serve with the second half of the macaroni salad and half of the cantaloupe.  Save the other half of the cantaloupe for another meal.


Soup, Garlic Bread, Celery/Carrots & Dip, and Cantaloupe

Buy 2 of the same Garden Fresh Soup (unless you think one is enough for your family, and save the second one for a lunch).  Heat up the soup while you make the garlic bread.   Use this recipe for the garlic bread (using the Italian loaf).  Serve with celery sticks, carrots,  dip, and the last half of the cantaloupe.

For the kebobs cut up one of the smoked sausage, the green pepper, and part of the small onion.  Save the big onion for the last meal.  Grill the kebobs.  Prepare the Rice A Roni according to package directions.  For the salad use half of the lettuce, one tomato, part of the small onion, a stalk of celery, and some diced carrots.

For the glazed smoked sausage, use the recipe found here.  The Louisiana Fish Fry package says you can use the breading on vegetables.  Use the second bag of seasoning with the large Vidalia onion.  Fry the onion rings in some oil until done.  Serve with salad, using half of the lettuce, one tomato, part of the small onion, a stalk of celery, and some diced carrots.

Crispy Roasted Garlic Chicken, Mashed Potatoes, and Asparagus

Follow this recipe for the Crispy Roasted Garlic Chicken.  Save the leftover chicken for the Chicken Parmesan Casserole another day.  If you have a bit of garlic left, save it for the garlic bread later in the week (or use garlic powder).  Make mashed potatoes the way you usually do- boil potatoes until tender, drain, mash, and add butter, milk, and salt and pepper.   Use no more than 1/2 of the potatoes, but you will probably need only 3-4. Use this recipe for a quick asparagus side dish.  Enjoy!


Chicken Parmesan Casserole, Salad, and Oranges.

Use leftover chicken from the Crispy Roasted Garlic Chicken from above for the Chicken Parmesan Casserole.  The recipe can be found here.  On that link is a recipe for homemade bread crumbs.  Use the ends from your Italian loaf or bread butts from on-hand bread you might have. For the salad, use 1/2 of the lettuce, chopped, 1/4 of the green pepper diced small, 1/3 of the onion, diced, 1/2 of the cucumber, sliced, and 1 Roma tomato, diced.  Take 1/3 of the bag of oranges and cut into small wedges as an easy side dish.


Pancakes, Eggs, Fried Potatoes, and Oranges

Use the Bisquick to make pancakes by following the recipe on the box.  Take the remaining eggs (however many you’d normally use) and make scrambled eggs.  For the potatoes, take 3-4 potatoes and dice.  Fry in a pan along with 1/2 of the green pepper, diced, and 1/3 of the onion, diced.  Serve with 1/3 of the bag of oranges, cut into wedges.


Lemon Butter Tilapia, Green Beans, and Rice

Going meatless on Friday?  Use this recipe for tilapia and serve up a yummy meal!  Make the green beans the way you usually do, or just saute in a bit of water until tender.  Top with butter, salt, and pepper.  For the Rice A Roni, just prepare according to package directions.


Lasagna, Salad, Garlic Bread, and Oranges

Yes, we did the lasagna last week also, but you can mix it up by getting another flavor.  Hey, if it’s on sale, tasty, and not too expensive it’s perfect for our meal plan!  For the salad use 1/2 of the lettuce, 1/4 of the green pepper, 1/3 of the onion, and 1 Roma tomato.  Use this recipe for the garlic bread.  If you have leftover garlic from the chicken, use it here.  Otherwise just use garlic powder.  Serve with 1/3 of the bag of oranges, peeled and separated.


**You will probably have leftover potatoes.  Save for the next week, or google recipes on how to shred/dice and freeze them.  If you have leftover eggs you can hard boil them and add them to your salads.

Crockpot Cabbage Rolls and Salad

I have made these cabbage rolls many times.  Plan ahead for a day when you’re not busy!!!  There are many steps to making this.  Use the outer leaves and save the inside of the cabbage for Cole slaw (another meal).  Use this recipe for the cabbage rolls.  For the salad use half of the spinach, 1/3 of the cucumber, 1/8 of the onion, and some of the carrots, diced.


Mashed Potato Flake Chicken, Pasta Salad, and Peas

For the mashed potato flake chicken, use this recipe.  Use 1.5 lb of chicken, halved and sliced into strips.  For the pasta salad, boil 3/4 to a whole box of noodles.  Dice up 1/8 of the onion, a bunch of carrots, 1/3 of the cucumber, 1/2 of the grape tomatoes, sliced, and 1/4 of the green pepper.  Top with Italian dressing. Heat peas in a pan and top with butter, salt, and pepper.


Crispy Pan Roasted Chicken Thighs, Cole Slaw, and Mashed Potatoes.

Use the recipe found here for the chicken thighs, subbing vegetable oil for the coconut oil.  For the cole slaw, use the inside part of the head of cabbage, saving the outside leaves for the cabbage rolls (another meal).  To make the Cole slaw dressing use this recipe.  Add 1/8 of the onion to your cole slaw.  Add celery seed if you have some on hand.  I also added extra carrots, sliced thinly.  Use the rest of the box of mashed potato flakes to make a side to go with your chicken.


5 Cheese Lasagna, Salad, and Canteloupe

Prepare the 5 cheese lasagna according to package directions.  While the lasagna is baking prepare your salad.  Use 1/2 of the spinach, 1/8 of the onion, 1/3 of the cucumber, and some of the carrots, diced.  Slice up 1/2 of the canteloupe, saving the rest for another meal.


Angus Sirloin Kebobs, Herbed Rice, and Canteloupe

For the kebobs, use the recipe found here.  Your kebobs will be using all of the mushrooms (unless you want a few on your salads), 3/4 of the green pepper, 1/2 of the onion, and 1/2 of the grape tomatoes.  With the rest of your bag of white rice, make the herbed rice with this recipe.  Serve with 1/2 of the cantaloupe, diced.

Chili Mac and salad

(Very important) CUT CHILI MAC RECIPE IN HALF.  Use the recipe found here.  Use ground turkey instead of ground beef.  You can buy a packet of chili seasoning, or just use chili powder, garlic powder, salt and pepper instead.  You will only need half of the shredded cheese.  You can save the other half for on top of your salads, or to add to your garlic bread (another meal). For the salad use 1/4 of the spinach, plus about 1/2 of the green leaf lettuce.  Use a few stalks of celery, some onion, and half of the cucumber.


White beans, sausage, and spinach, plus garlic bread

Use this recipe to make the white beans, sausage, and spinach.  One can of chicken broth is a smidge under 2 cups, but should still be fine.  Use this recipe for the garlic bread, using the Italian bread to make it.  If desired, add 1/2 of the bag of shredded cheese on top.  Yum!


Homemade White Castle Burgers, Macaroni Salad, and grapes.

If you don’t like White Castle, don’t worry.  This doesn’t taste exactly like it.  Regardless, they are super tasty!!! You can trim the hamburger buns down to smaller White Castle-type size, or just cut the burgers better.  My husband requested these two days in a row the first time I made them!!  Instead of onion flakes, I just sprinkled diced onion on the bottom of the pan.  The cheese slices are for your burgers- recipe can be found here. Boil an entire 1 lb box of elbow noodles and drain.  Add a few stalks of diced celery, diced onion, salt and pepper, mayonnaise, and a squirt of yellow mustard. Easy macaroni salad!!   And much less gloppy than store-bought.


Chicken Legs, Macaroni Salad, and Apple slices.

Sprinkle your favorite seasoning for chicken on the chicken legs.  If you don’t have any special blends, use garlic powder, onion powder, and oregano.  Grill chicken.  While it is grilling slice up the apples.  Serve with leftover macaroni salad (since you made a lot!)


Meatloaf, Rice, and Salad

Use this recipe to make the meatloaf.  You can use any type of binder- bread crumbs, old crackers crushed up, etc.  While it is baking prepare your Rice A Roni according to package directions.  Use the rest of your salad ingredients here- lettuce, celery, onion, and cucumber.  If you have leftover shredded cheese sprinkle on top of your salad.

Slow Cooker Lemon Herb Leg Quarters, Asparagus, Salad

Use this recipe for the chicken (2-3 lbs).  Roast asparagus how you usually would.  Serve with salad.  For salad, use 1/2 of the lettuce, 1/2 of one green pepper, 1/4 of the onion, and one tomato.


Smoked Sausage Kebobs, Grilled Potatoes, and Canteloupe

To make kebobs, slice sausage, chunk one green pepper, and 1/2 of the onion.  Thread onto skewers.  Sprinkle with salt and pepper and grill until done.  For potatoes, I would thread separately in case they take longer to cook.   Boil 1/2 of the potatoes in salted water for 8-10 minutes.  Thread onto skewers.  Grill potatoes for 10-12 minutes.  Cut up 1/2 of the cantaloupe into chunks and serve.


Rusted Roasted Chicken, Green Beans, and Garlic Roasted Potatoes

Use this recipe for the chicken.  You will need 2-3 lbs of chicken. Use this recipe for the potatoes.  During the last few minutes, heat green beans according to package directions.  Top green beans with butter, salt, and pepper.


Baked Crab Cakes, Macaroni and Cheese, and Canteloupe

Use this recipe for the crab cakes.  Use both packages of crab.  Omit dipping sauce, chives, and cilantro. Make sure you toast the panko according to directions- these are SO good!!  Make macaroni according to package.  Serve with remaining 1/2 of the cantaloupe.


Spaghetti, Salad, and Biscuits

Heat pasta and sauce according to directions.  Bake biscuits in oven- serve with butter.  For salad, use 1/2 of the lettuce, 1/2 of a green pepper, 1/4 of the onion, and one tomato.

French Toast With Strawberries, Eggs, Bacon

Slice the Meijer Italian bread into thick slices.  Make your standard French Toast recipe (4 eggs and 1 cup of milk mixed).  Top with diced strawberries, powdered sugar, and syrup.  Prepare 8 eggs however you’d like.  Serve with bacon, baked at 350, for 15-18 min.  Save 2 pieces of cooked bacon for the avocado pasta later in the week.


White Chicken Chili, Salad

Use this recipe to make the White Chicken Chili.  If there’s any chicken left after this, dice and freeze it for a later meal.  Make salad using 2/3 of the lettuce, one tomato, 1/3 of the onion, 2 stalks of celery, and a few carrots.


Avocado Pasta, Garlic Breadsticks, Carrots and Dip

Use this recipe for the avocado pasta, using 1/3 of the white onion instead of the green onion.   Bake the breadsticks while preparing the pasta.  Serve with sliced carrots and Heluva dip.

Crockpot Ranch Pork Chops , mashed potatoes,  green beans

Follow this recipe to make the pork chops:

Green beans – Melt 1 tbs butter in a skillet over medium, dump half a bag of green beans. Season with salt and garlic powder and continue cooking and stirring until beans are lightly browned, 10 to 15 minutes.

Peel and slice 6-7 potatoes. Boil until tender (I test them by using a fork and if they break they are done). Drain potatoes and add ¼ cup of butter.  Whip with a hand mixer and salt/pepper to taste. Once the potatoes are lump free slowing add milk to desired thickness (around ¼ cup)


Hawaiian Grilled Pork Chops, Grilled Pineapple, green beans, Roasted potatoes

Follow this recipe for the grilled pork chops (omit the ginger if you prefer). Go ahead and grill the whole can of pineapple to have as a side.

Green beans – Melt 1 tbs butter in a skillet over medium, dump half a bag of green beans. Season with salt and garlic powder and continue cooking and stirring until beans are lightly browned, 10 to 15 minutes.

Roasted Potatoes – peel and chunk potatoes. Drizzle with olive oil and season with ms dash and salt.  Spread evenly on cookie sheet and baked at 425 for 25 to 35 minutes


Crockpot Chicken legs, potatoes, and carrots

½ pkg chicken legs

4-5 large potatoes, peeled cut in quarters or halves

5 carrots, cut in 1-2 inch pieces

3-4 Tbsp olive oil.

first spray my pot with cooking spray and then dice up the potatoes and carrot.
Put the potatoes and carrot in the bottom of the pot. I will typically toss them with some seasoning salt and garlic & herb seasonings. Before putting the chicken in the pot, I’ll coat it with either a montreal chicken or italian herb seasoning (ms. Dash). Just set the chicken in the pot. The potatoes and carrot act as a bedding for them to cook. No need to add broth or water, the juice from the chicken alone will keep it moist.
Cook on low for 6-8 hours. It’s just that simple.


Italian Chicken Legs, Pasta Salad, and Grapes

Put ½ the pack of chicken legs in a gal Ziploc bag  with about half a bottle of Italian dressing and let marinate in the fridge at least a hr or overnight.  Grill or bake them at Bake at 375 for half an hour. Turn drumsticks over and bake another half an hour (or until cooked til 160 degrees)).

Pasta Salad : Boil half a box or desired amount of pasta (reserve ¼ cup for soup) as directed on the box. Dice tomato and half of cucumber while the pasta cooks. Drain pasta and rinse with cold water to cool off. Mix pasta, Italian dressing to taste, tomatoes, and cucumber.


Quick Vegetable Soup, Cucumber Slices, and Grapes

2 cans chicken broth

1 can diced tomatoes

½ cup chopped onion

1 package frozen mixed vegetables (thawed)

½ teaspoon dried basil

Salt and black pepper to taste

¼ cup pasta

In a large saucepan, bring the broth, tomatoes, onion, vegetables and seasonings to a boil. Add pasta; simmer, uncovered, for 10 minutes or until pasta is tender. If you want you can add 1 cup of leftover chicken or beef.

Serve with crackers, remaining cucumber slices, and grapes

Maple-Mustard Bone-in chicken thighs and potatoes, salad

Use the bone-in thighs, 1/2 of the potatoes (or less).  Use the recipe found here for the chicken and potatoes.  For the salad use 1/2 of the cucumber, 1/3 of the onion, 1/4 of the red and yellow pepper, and as many carrots as you want!


Chili and salad

For the chili, brown the ground turkey, drain, and return to pan.  Add 1/3 of the onion, diced.  Add one can tomato soup, all of the tomato juice, the chili beans, and a bunch of chili powder.  If you have extra green peppers on hand from last week (or frozen) throw those in, too.  Let simmer for awhile..  Serve in a bowl with broken up saltine crackers on top.  For the salad use 1/2 of the cucumber, 1/3 of the onion, 1/4 of the red and yellow pepper, and as many carrots as you want!


Panko-Crusted Chicken, Mac N Cheese, and a frozen veggie

Use the boneless chicken breasts cut up into strips. Use a basic recipe like this one here to make the chicken strips.  If you want, crush up some saltines and add to the panko mix.  While the chicken is cooking, make the macaroni and heat up the frozen veggie.


Glazed Brown Sugar Meatloaf, mashed potatoes, and a frozen veggie.

Use the recipe here for the meatloaf.  While it’s in the oven go ahead and make good ol’ mashed potatoes.  Boil the potatoes until tender, then mash and add butter, milk, salt and pepper.  Heat up the green veggie and enjoy!


Chicken Thighs, Knorr sides, and sliced raw veggies.

Plan ahead- marinate the boneless chicken thighs in one of the Sweet Baby Ray Marinades of your choosing.  Once they are done marinating, grill until cooked through.  While grilling, heat up the Knorr side, and slice up the rest of the salad veggies (cucumber, peppers, and carrots).

Stuffed Peppers, salad, carrots and dip

Cut up half a head of lettuce for salads. (Make sure to reserve 1tbsp of paste for shepards pie)

Stuffed Peppers

1/2 lb. Ground beef
4 Bell Peppers, tops and seeds removed
1 package Birds Eye Steamfresh Protein Blend, Southwest Style, cooked per package directions
1 can tomato paste (reserve 1 TBSP for Shepards pie)

5 tbsp water
1 tbsp. Chili powder
1/4 tsp. Garlic powder
1/4 tsp. Onion powder
1/4 tsp. Dried Oregano
salt and pepper to taste

Shredded cheese (optional)

Preheat oven to 350 degrees. Coat baking dish with non-stick cooking spray. Dish should be just large enough to hold peppers upright. Brown beef over medium high heat, breaking up as much as possible while it cooks. Drain and add all the other ingredients except cheese. Reduce heat to medium low and continue cooking for 5 minutes. Fill each pepper to the top with mixture. Cover baking dish with foil and bake for 15 minutes. Remove foil, sprinkle evenly with cheese and continue baking, uncovered, for 5 minutes. Peppers will still be warm but still firm and crisp, add more cooking time if you prefer softer, fully cooked peppers.


Teriyaki Chicken Legs, rice a roni fried rice, carrots and dip

Marinade chicken legs following directions on the sweet baby rays bottle. Pre-heat the oven to 400˚F.

Cover the chicken legs with foil and roast for 20 minutes. Turn the legs and roast for 10 minutes more, then remove the foil and roast for 5-8 minutes more to darken and crisp the legs.

Follow direction on box for rice a roni and peal/slice carrot sticks


Beef Rice a roni, green beans, apple slices

Brown 1 lb of ground beef and remove from pan. Then follow directions on rice a roni box. When you start to simmer the rice as directed add ground beef into the pan.

Cook green beans as desired. I like to good them with a beef bouillon cube, black pepper, and dehydrated chop onion.


Shepherd’s Pie, salad, apple slices

Use Remaining lettuce to make salads and slice apples.

Follow this recipe for shepherds pie you need the tomato paste that you reserved from the peppers.  Use bag mixed veggies in place of the individual ones listed in the recipe.  http://www.artandthekitchen.com/super-shepherds-pie/

This recipe should leave plenty of leftovers for a 6th meal this week.

Meal Plan:

Smoked Sausage with cabbage, Homemade garlic toast, and grapes

Follow the recipe here for the smoked sausage and cabbage, using half of the cabbage and 1/4 of the onion.  While that’s frying up, go ahead and prep and bake the homemade garlic toast, using the recipe found here.  Serve with grapes.


Turkey Tacos, spanish rice, and blackberries

Brown the ground turkey, and follow the rest of the directions on the Ortega taco seasoning/shell packages.  Use 1/4 of the onion, one tomato, and 1/4 of the lettuce.  Top with salsa.  Serve with Rice-A-Roni spanish rice and blackberries.


Chicken Legs, cole slaw, and Annie’s Mac n Cheese

Sprinkle chicken with garlic powder, onion powder, and oregano.  While chicken is grilling prepare the cole slaw.  Use 1/4 of the cabbage and 1/4 of the onion for the slaw, and use the recipe found here.  Prep the mac n cheese while the cole slaw is chilling in the fridge.


Chef Salad,  Garlic Bread, and mango

Use 1/2 of the lettuce, 1 tomato, 1/3 of the cucumber diced small, 1/4 of the onion, a few carrots, the ham (diced) and half of the Meijer Cheddar slices (diced).  Top with your favorite salad dressing.  While prepping the salad, go ahead and make the frozen garlic bread.  Slice the mango and enjoy!


BLTs with cheese, sliced cucumber, and chips.

You will need 1/4 of the lettuce, 1 tomato, and 2/3 of the cucumber.  Cook bacon how you prefer (skillet, microwave, oven, etc).  Toast bread and spread on mayo.  Top with bacon, lettuce, tomato, onion, and the Meijer Cheddar slices.  Slice cucumber thinly and top with salt, pepper, and lemon juice.  Serve with chips.

Meal Plan:

Green Chili Cream Cheese Chicken Enchiladas and Spanish Rice

You will need: chicken breast (cooked), green chiles (1 small can is fine), green enchilada sauce (1 small can is fine), tortillas, cream cheese, shredded cheddar cheese, and spanish rice

The recipe for the enchiladas can be found here.  I found that using a small can of sauce and chiles was plenty for our enchiladas.  These are so yummy!  While the enchiladas are baking, prepare the spanish rice according to the package.


Spaghetti, Salad, and Garlic Bread

You will need: pasta, sauce, half of the spinach, 1/2 of the green pepper, 1/4 of the onion, baguette, butter, mayonnaise, oregano, garlic powder, and parmesan.  Make spaghetti and sauce as you usually would.  The spinach, pepper, and onion are for the salad.  For the garlic bread, use the recipe here, omitting sage.


Smoked Sausage With Peppers, Peas, and Blueberries

You will need: smoked sausage, 1/2 of the green pepper, 1/2 of the red pepper,  1/4 of the onion, olive oil, oregano, parmesan, peas, and blueberries.

Hawaiian Kebobs, Peas, and Rice

Follow the recipe for the kebobs here.  Change fresh pineapple to canned pineapple.  Use powdered ginger instead of fresh.  The kebobs will be chicken, pineapple, 1/3 onion, and green pepper.  Prepare peas in a sauce pan and sprinkle with salt, pepper, and butter before serving.  Prepare rice according to box.

Pull-Apart Pizzas, Grapes, and Cucumber Slices

Follow the recipe for the pizza here.  Serve with red grapes, and cucumber slices topped with salt, and pepper.

Meal Plan:

Beef N Cheese Pie, Fries, Pineapple slices

Mix 1 lb meat, 1 can evaporated milk, 1/4 c. bread crumbs and garlic salt in an 8″ pie pan.  Top with 1/3 c. ketchup, oregano, and shredded cheddar cheese.  Bake at 350 for 30 minutes.  Serve with fries and sliced pineapple (use 1 pineapple and save the other).

Hot Dogs, Chips, Grapes

Save this for when you need a quick meal!  Grill hot dogs, or however you prefer to make them.  Serve with chips and grapes.  Quick and easy!

Crockpot Chicken, Rice, and Peas

For the crock pot chicken, take half of the chicken (1.5 lbs), and put it in a slow cooker.  Top with 3/4 c orange marmalade, 3/4 c BBQ sauce, and 2 tbsp soy sauce. Cook for 3 hours on high or 6 hours on low.  Drain.  Shred chicken and serve over prepared rice.  Heat peas in a sauce pan with a little water.  Top with butter, salt, and pepper.

Stuffed French Toast, Bacon, Eggs.

To keep costs down I am omitting orange juice, orange zest, and half & half (subbing with milk).  Follow the recipe here to make the stuffed French Toast.  Serve with bacon and eggs, prepared however you like.

#1 Grilled Chicken Legs, Rice A Roni, Birds Eye Vegetable

For the grilled chicken legs liberally sprinkle garlic powder, onion powder and oregano.  Rice A Roni follow package directions.  Birds Eye Veggie you can cook in a saucepan and top with butter, salt, and pepper.

#2 Italian Chicken Thighs, Mashed Potatoes, Birds Eye Vegetable

For the chicken thighs use this recipe found here.  Like the lady in this recipe, use bone-in instead of boneless.  Make mashed potatoes by boiling potatoes, draining, and adding butter and milk, salt and pepper to your liking.  Birds Eye Veggie you can cook in a saucepan and top with butter, salt, and pepper.

#3 Eggs, Bacon, Potatoes, and Oranges

Prepare the eggs however you’d like.  If you have leftover raw veggies from last week on hand, throw them in and make an omelette.  Otherwise scrambled or sunny side up is ok!  Dice potatoes and fry in a little vegetable oil to make hash browns.  Season with salt and pepper.  I like to put ketchup on the side!  Serve with bacon and orange wedges .

#4 Sloppy Joes, Oranges, and Birds Eye Vegetable

Use the recipe for the sloppy joes that’s found here.  You can leave out the lemon juice if you don’t have it on hand.  Birds Eye Veggie you can cook in a saucepan and top with butter, salt, and pepper.  Serve with orange wedges.

#5 Super Sub, Chips, and Red Grapes

You can find the super subs in the deli or by the front entrance in a cooler (at my store).  Add oregano or prepared Italian dressing if you’d like.  Serve with chips and grapes.

Here is the menu:

Chicken cordon blue casserole, green beans, grapes

Tacos (lettuce and cheddar cheese), black beans, baby carrots

Ranch Cheddar Chicken, baby carrots, pasta roni

Italian Bread Pizza, salads (use head lettuce leftover from tacos), chips

Chicken soup, chips, grapes

Chicken Cordon Blue Casserole

1 1/2 lbs. boneless chicken breasts, cut into 1″ cubes
1 1/2 c. ham julienned
2 c. grated Swiss cheese
1 can cream of chicken soup
1/2 c. water
Finely crushed bread crumbs

Butter a 2 quart casserole dish. Sprinkle bread crumbs on the bottom. Add half of the cubed chicken. Sprinkle half of the cheese over the chicken. Add a layer of ham.

Pour half of a chicken soup/water mixture over. Repeat chicken, cheese, soup mixture, ham.

Sprinkle bread crumbs evenly over the top and season with salt and pepper.

Bake, covered, at 350°F for 40 minutes.

Ranch Cheddar Chicken Recipe

what you’ll need

boneless, skinless chicken breasts

3/4 cup ranch dressing

3/4 cup breadcrumbs

1/4 cup  cheddar cheese

Preheat oven to 400 degrees. Line a baking sheet with parchment paper and spray with cooking spray.

Trim chicken breasts, place in a large bowl then pour ranch dressing over the chicken and mix until evenly coated. Marinate for up to overnight or bread immediately.

To make the breading, add breadcrumbs and  cheddar cheese into a shallow bowl then stir until well combined.

Remove chicken from dressing and allow the excess to drip off but leave any that clings to the chicken. Completely coat each breast in the breading mixture.

Arrange the chicken on the baking sheet, spritz top of chicken with cooking spray and bake 22–25 minutes or until the breading is crisp and chicken is cooked through. Remove from oven and allow it to rest 5 minutes before serving. Enjoy!

Italian Bread Pizza

3 tablespoons butter

4 tablespoons extra-virgin olive oil, divided

Garlic Powder

1/2 teaspoon dried oregano

salt

1 large loaf French or Italian bread (see note above), about 18 inches long and 4 inches wide, split half lengthwise and crosswise

1 (14.5 ounce) can crushed tomatoes

8 ounces freshly grated whole milk mozzarella cheese

  1. Adjust oven rack to upper position and preheat oven to 425°F. Melt Butter then add 3 Tablespoons of oil oil, pinch of salt, and garlic powder to taste.
  2. Cut Bread in half long ways.Place bread cut-side-up on a clean work surface. Using a rimmed baking sheet, press down on bread evenly until compressed to about 2/3rds of its original height. Place bread on top of rimmed baking sheet. Using a pastry brush, brush half of garlic/butter/oil mixture evenly over cut surfaces of bread. Set aside.
  1. Add tomatoes to remaining garlic/butter/oil mixture in pan, stir to combine, increase heat to medium, bring to a simmer, then reduce heat to maintain a bare simmer. Cook, stirring occasionally, until rich and reduced, about 15 minutes. Season to taste with salt.
  2. While sauce cooks, spread 1/4 of mozzarella evenly over surface of bread and transfer to oven. Cook until cheese is barely melted, about 8 minutes. Remove from oven and set aside until sauce is cooked.
  3. Spread sauce evenly over bread, then spread remaining mozzarella on top of sauce. Transfer to oven and bake until cheese is melted and just starting to brown, about 10 minutes

Spaghetti Pie and Salad

You will need: Pasta, sauce, cottage cheese, mozzarella, 2 eggs, margarine, spinach, red pepper, cucumber, and celery.

You will need tortillas, 1 lb chicken, cream cheese, shredded cheddar cheese, green chiles, both enchilada sauce, rice, bananas, and juice.

Follow the recipe for the the chicken enchiladas found here.  During the last 10 minutes of baking time heat up the mexican rice according to package directions.  To make the smoothies, mix 2 bananas and 1-2 cups juice or water in a blender.  (You can adjust thickness by amount of juice or water added).  If you have other fruit, berries or pineapple on hand (fresh or frozen), you can add those as well.  Have extra yogurt on hand?  Throw that in too!  Make two batches of smoothies to use up all four bananas.

French Toast, Grapes, and Hashbrowns

You will need Texas Toast, milk, eggs (save 1-2 for last meal), syrup, butter, potatoes, vegetable oil, and grapes.

Make the French toast by mixing 2 eggs with 1/2 cup of milk.  Dip bread on both sides in the mixture and pan cook a few minutes on each side until golden brown.  For the potatoes, dice or slice potatoes and cook in oil until cooked through.  If you have extra diced onions or peppers on hand, toss those in.  You can top with leftover cheddar cheese from the enchiladas.

Potato Crunchy Tenders, Frozen Veggie, and Salad

You will need: 1.5 lb chicken, mashed potato flakes, milk, egg, salt and pepper, vegetable oil, frozen veggie, spinach, pepper, cucumber, and celery.

Follow the recipe for the potato crunchychicken tenders here.  While those are cooking heat up your frozen veggie and season to your liking.  Make the salad by using 1/2 the spinach, 1/2 diced red pepper, 1/2 the cucumber, and 1 stalk celery.

Grilled Cheese, Tomato Soup, and Celery and Dip

You will need:  Texas Toast, margarine, Cheddar Cheese Slices, Tomato Soup, Celery, and Dean’s Dip.

Make grilled cheese using the texas toast and cheddar cheese slices.  While those are cooking, use both cans of soup and let simmer according to package directions.  Slice up celery into dipping-size stalks.  If you have leftover red pepper or cucumber, slice those up as well.  Serve with dip.

Recipes:

Garden Fresh Soup, Deli Sub, and Oranges

You will need: Soup, sub, oranges

Heat up soup according to package.  Slice deli sub in 8 pieces.  Slice oranges into wedges (use about half of the bag, saving half plus one extra orange for other meals).

Pancakes, Eggs, Sausage Patties, and Oranges

You will need: pancake mix, syrup, sausage, flour, 1/4 onion, eggs, milk, and oranges

Prepare sausage patties, omitting sage (unless you have a bit of ground sage you want to add in).  Use the recipe found here.  While the sausage is cooking, prepare pancakes according to package directions.  Make the eggs however you would like (scrambled, sunny side up, etc).  Use the other half of the bag of oranges and slice into wedges.  Save one orange for another meal.

Sloppy Joes, Chips, and Carrots and Dip

You will need: 1.5 lb ground beef, worchestershire, mustard, ketchup, 1/4 onion, brown sugar, garlic powder, chips, carrots, and dip

Divide the 3 lb of ground beef in half.  Use half for this recipe.  The sloppy joes recipe can be found here.  Since the recipe calls for 2 lbs and we are using 1.5 lbs of meat, you can use slightly less of each of the other ingredients.  Peel and slice carrots into sticks.  If you have pickles on hand, slice those and top your sloppy joes with them.

Thai Chicken Salad and Garlic Bread

You will need: chicken, lettuce, green pepper, 1/4 onion, 1 can mandarin oranges, carrots, garlic bread, and if making the dressing- peanut butter, rice vinegar, one orange (for zest and juice), soy sauce and ground ginger.  Otherwise, prepared italian dressing is fine.

Season chicken with salt and pepper and grill, bake, or pan cook.  Slice into chunks.  Prepare salad by chopping lettuce, dicing pepper, carrots, and onion.  Top with cooled chicken and mandarin oranges.  The recipe for the dressing can be found here.  Otherwise use Italian.  While preparing salad, make garlic bread according to package directions.

Tacos, Refried Beans, and Grapes

You will need: 1.5 lb ground beef, taco kit, refried beans, lettuce, roma tomatoes, 1/4 onion, cheese, and grapes.

Prepare ground beef according to taco kit instructions.  Top taco shells with meat, lettuce tomato, onion, and cheese.  While meat is cooking heat beans in saucepan or in microwave.  Serve with grapes on the side.

Chicken N Biscuits and Salad

You will need: chicken, onion, cream of chicken soup, biscuits, green leaf lettuce, 1/2 green pepper, 1 roma tomato, 1/2 cucumber diced small.

Recipe for chicken and biscuits can be found here.  Cut the recipe in half.  I find these types of recipes make SO much!!!

Side dish: salad made with lettuce, tomato, onion, cucumber, green pepper

BLT, Pea Salad, and Chips

You will need: Texas toast, bacon, green leaf lettuce, 1 roma tomato, peas (thawed), mayonnaise, ranch, 1/2 diced onion, 4 slices cheddar cheese, diced, Meijer nacho tortilla chips

Prepare all of the bacon your usual way.  Toast the bread.  Spread with mayo, and top with bacon, sliced tomato, and lettuce.  Pea salad- add diced onion, crumbled bacon (2-3 slices), 4 slices cheddar cheese, diced, a few tablespoons of mayonnaise, a tablespoon of ranch dressing, and salt and pepper.   Serve pea salad cold.

Side dishes: Pea salad and tortilla chips

Glazed Smoked Sausage, Cole Slaw, and Green Beans

You will need: 2 Smoked Sausage, sliced, apple sauce, dijon mustard, brown sugar, cole slaw, mayonnaise, white vinegar, white sugar, lemon juice, and green beans.

You can find the recipe for the Smoked Sausage right here.  While it is cooking, heat up the green beans in a pot on the stove.  To make the cole slaw dressing, use the recipe found here.

Side dishes: Cole slaw and green beans.

Pasta Salad and Garlic Bread

You will need: Pasta, cooked.  Pepperoni, green pepper, onion, 1 roma tomato, 1/2 cucumber, 4 cheese slices, Italian dressing, texas toast, butter, and garlic powder.

For pasta salad, add the following to cooled, cooked pasta- (all diced), pepperoni, 1/2 green pepper, onion, tomato, cucumber, and cheese.  Top with Italian dressing and mix well.  For Texas toast, spread with butter, and add garlic powder.  Bake in 375 degree oven for 5-6 minutes (watch carefully).

Side dish: Texas toast garlic bread

Fake White Castle Hamburgers, Corn, and Grapes.

You will need: Ground beef, seasoned salt, diced onion, buns, cheese slices, corn, and grapes.

Spray an 8×8 pan with non-stick spray.  Sprinkle bottom of pan with diced onion.  Spread ground beef over onions and pat down well.  Sprinkle with seasoned salt.  Bake in 350 degree oven around 20 minutes, or until done.  Top with cheese slices and bake one minute more.  While they are baking heat corn in pan on stove.  When burgers are done, slice and placed onto buns.

Side dishes: Corn and grapes

Ravioli, Steamed Broccoli, and Pillsbury Biscuits

You will need ravioli, spaghetti sauce, broccoli, and Pillsbury biscuits.

Cook ravioli per instructions on bag.    Prepare Pillsbury biscuits according to package.  Heat sauce in a sauce pan.  Steam one crown of the broccoli.  Serve ravioli in a bowl with sauce on top.

Side dishes:  Broccoli and Pillsbury Biscuits

Chicken and Stuffing Tenders

You will need chicken, vegetable oil, eggs, stuffing, green beans, and Meijer Deluxe Mac and Cheese.

Use 1.5-2 lbs of the 3 lbs of chicken for these.  Use this recipe to make the chicken tenders.  Heat green beans in a sauce pan with a little water.  Serve with butter and salt and pepper on top.  Make macaroni according to package.

Side dishes: Green beans and Mac and Cheese

Egg Salad Pita Pockets

You will need eggs, pita, celery, 1/4 onion, mayonnaise, salt and pepper, Paqui chips, and blackberries.  Dill and relish optional.

Prepare six hardboiled eggs.  Dice them up and mix with diced onion, diced celery, mayonnaise, salt and pepper.  If you want to add dry dill and relish, go ahead.  Serve inside pita pockets.

Side dishes:  Paqui chips and blackberries.

Teriyaki Chicken Stir Fry

You will need 1.5 lbs chicken, 2 stalks celery, 2 carrots, 1/4 onion, broccoli, white rice, teriyaki sauce, and apples.

This is one of those recipes I’m going to change up.  Here is the original recipe.  It will be cheaper to skip the homemade teriyaki and just used prepared sauce instead.  Follow the rest of the recipe, omitting zucchini, and adding celery stalks and onion.  White rice: put 3 cups water and 1.5 rice into cold saucepan.  Heat to boiling, cover, and simmer for 25 min.  Serve stir fry either on top or next to rice.

Side dish:  Sliced apples.  If you have leftover salad items you can make a salad.

White Beans With Spinach & Sausage

You will need sausage, spinach, cannellini beans, chicken broth, lettuce, 2 carrots, 2 celery stalks, tomato, 1/4 onion, pita bread.

Follow the directions for making the white beans with spinach and sausage here.  While it is cooking make the salad.  Dice lettuce, carrots, celery, and onion.

Side dishes: Salad and leftover pita bread or Pillsbury biscuits

Turkey Chili

You will need ground turkey, 1 (or both) cans beans, 1/2 onion, two cans tomato soup, chili powder, kraft cheddar cheese, and noodles

Brown ground turkey and drain.  Add both cans tomato soup (no water), beans, diced onion, and chili powder to taste.  Simmer for 30 minutes.  Serve over noodles with shredded cheese on top.

Side dishes: Sliced cucumber with salt and pepper and Cole’s Mini Loaf Garlic Bread

Smoked Sausage Kebobs

You will need two smoked sausage, one orange or yellow pepper, 1/2 onion, Rice A Roni, and peas

Slice smoked sausage, pepper and onion and slide onto skewers.  Season with salt and pepper.  Grill until cooked through.

Side dishes: Rice A Roni and Peas with butter

Whole Roasted Chicken 

You will need one whole roasting chicken, 1/2 onion, potatoes, crescent rolls, garlic, lemon, and green beans

Instructions for chicken can be found here.  Add one or two chunked potatoes to chicken.

Side dishes: Crescent Rolls, and green beans with butter, salt, and pepper

Chicken Quesadilla

You will need leftover chicken from above, diced, 8 tortillas, Mexican cheese, onion, salsa, grapes, and Old El Paso Refried Beans

Layer tortilla, chicken, cheese, and onion in a skillet.  Top with another tortilla.  Cook on medium until slightly browned and flip.  Cook until other side is browned as well.  Slice into 6 pieces and serve.  Make four of these.

Side dishes: grapes and refried beans

Breakfast For Dinner

You will need eggs, potatoes, onions, sausage, and apples

Cook eggs how you prefer them- scrambled, sunny side up, omelette (with leftover peppers, onions, cheese, etc).  Put diced potatoes in a pan heated with a little oil.  Add leftover pepper and onion and cook until potatoes are cooked through and crispy.  Top with leftover shredded cheese if you’d like.

Side dishes: Sausage and sliced apples.
