Meals are planned for a family of four- if your family is full of big eaters, you may need to buy extra

Mom’s Tuna Casserole, Salad, and Strawberries

I loved this casserole growing up. Melt 2T butter in a sauce pan.  Add 2T flour and cook 1-2 minutes.  Slowly add 1c. milk.  Whisk to make smooth.  Once boiling, simmer gently for 8-10 minutes.  Add two cans tuna (drained).  Butter 2 qt casserole pan.  Add one layer crushed potatoes chips, one layer tuna, one layer crushed chips, rest of tuna, and top with chips.  Bake 350 for 30 minutes.  For salad, use half of the lettuce, the tomato, half of the cucumber, and some of the carrots.  Serve with sliced strawberries.  Save any leftover strawberries for pizza night.

Grilled Cheese, Chips, and Apples

Nothing too exciting, but let’s use up those chips and take advantage of cheap apples!  Slice the Italian bread and butter one side of each piece.  Top with cheese slices, and cook in a skillet or on a George Foreman Grill.  Serve with the rest of the chips and sliced apples.

Honey Garlic Chicken Thighs, Frozen Vegetable, and Rice A Roni

Plan ahead and use the crockpot to make this yummy chicken dish.  Serve alongside whatever frozen vegetable you picked, plus the Rice A Roni.

Ling Ling Entree, Sesame Ginger Snap Peas, and Asian Salad

Follow package directions to make your Ling Ling Entree.  For the Sesame Ginger Snap Peas use this recipe.  If you don’t have fresh ginger, just sprinkle a little powdered instead.  Use up half the lettuce, half the cucumber, some carrot, the mandarin oranges, chow mien noodles, and asian dressing for the salad.

Pizza, Broccoli, Parfaits

Easy night!  You can either steam the broccoli, or chop it up and dip in ranch dressing.  Work on that while the pizza is cooking.  Use your leftover strawberries, plus the two bananas to make a yogurt parfait as a fun and healthy side dish.

Bonus Recipe!!!  Apple Crisp

You should have some leftover apples, so here’s an easy apple crisp recipe!  Enjoy!
